Spinach Venison Taco Salad

Tonight when I made dinner I had some ground venison left over.  I had already started a spinach salad and had some corn chips left over so I thought taco salad!

Ingredients:

Baby Spinach

1/3 of a pound ground venison

2 TBSP finely chopped red onion

Finely chopped mushroom stems

Corn Chips

Thousand Island Dressing

1/2 a cup shredded cheddar cheese

Directions:

Buy enough spinach to fill a salad bowl.  Figure about two bunches if you’re buying it fresh.  Wash the spinach and put it aside.  Add the red onion to the spinach.  Add the mushroom stems to the spinach.  Set aside.

Brown the ground venison in a small frying pan.  Drain off the excess fat.  Add the ground venison to the spinach.  Toss to mix.  Add about 6 oz. of crushed chips to the spinach.  Add 3 TBSP of thousand island dressing.  Add shredded cheddar cheese. Toss to mix.  And you have a tasty salad!
