Tilapia Meal


This is a fairly simple meal to make.Take three or four baby bella mushrooms and wash them.  Slice and put aside.  Take a small summer squash and slice it as well.  Preheat a non-stick pan to medium high.  Melt two TBSP of butter in the pan.  Allow to melt.  Add the mushrooms and summer squash.  Allow to cook for about five minutes.  Add some cored and sliced jalapeno to the pan.  Add a chopped Roma tomato as well.  Add a four ounce tilapia fillet to the pan.  Sprinkle some of Trader Joe’s African Smoke spice mix on top.  Cover the pan and allow to cook until fish flakes easily.  There you have it.  A healthy lunch for one!
