I made this cucumber salad quickly. Best part was it requires no stove whatsoever! To make this salad follow these steps:
1) Take two medium cucumbers and skin each. Slice the cucumbers. Place in a salad bowl.
2) Finely chop one small red onion. Add to the cucumbers. Finely chop some baby yellow onions (I just pulled some onions from my garden). Add to cucumbers as well.
3) Take some fresh purple and sweet basil and chop. Add to cucumbers.
4) Add 1/4 cup crumbled blue cheese to the salad bowl. Toss together. Add 1 TBSP extra virgin olive oil, 1 TBSP red wine vinegar, and 1 TSP apple cider. Toss salad. And there you have it. A cold cucumber salad!
What I paired it with:
I paired the cucumber salad with bacon wrapped medallions and grilled corn. To make the grilled corn on the cob follow a few simple steps. Peel off the husk. Brush each ear with a mixture of extra virgin olive oil and ground rainbow peppercorns. Grill the corn until you start hearing the ears pop. About ten to fifteen minutes. Once I got the corn on my plate I crumbled a few pieces of blue cheese on them.
