To make these stuffed tomatoes follow these simple steps:
Take two fresh Roma tomatoes and cut each in half. Scoop out the insides. Finely chop two spring onions. Mix the onions with 1/4 cup olive oil mayo. Add 2 TBSP of finely chopped red basil. Add 1/4 cup finely grated Parmesan cheese. Mix together. Fill the tomato halves with your mayo filling.
Roast the tomatoes at 425 degrees for about 10-15 minutes. Enjoy!
