This was super easy to make. I whipped it up in my blender in about fifteen minutes. The nice thing is I can add a lot of extras to this basic recipe.
Drop four cloves of garlic into your blender. I chopped mine into chunks. Add one can of chickpeas (about 2 cups). Add 2 Tbsp. of liquid reserved from the chickpeas. Add 2 tsp. (or two springs) of tarragon, leaves only. Add 1/4 cup cilantro leaves and a handful of basil leaves. Finally add 1/3 cup tahini (ground sesame seeds). Blend until smooth. Add 2 Tbsp. walnuts. Blend until smooth. If needed, add more liquid from the can of chickpeas. Serve with crackers or broccoli florets. You can serve this right away or chill in the fridge.
Ideas for Dressing it up:
-Add chopped jalapeno or poblano peppers, be sure to remove core
-Add sun dried tomatoes and artichoke hearts
-Experiment with different herbs, such as mint and dill weed
-Add chopped green and/or black olives and feta cheese
