How to Make Pesto Topped Baguettes

Pesto Topped BaquettesStart with a good french baguette.  You’ll be looking for a long, skinny loaf.  Cut the baguette into thin slices.  Set the bread aside.

Combine a cup of fresh cilantro, 1 oz. of fresh basil, and 1/4 cup of extra virgin olive oil in a food processor or blender.

Fresh Cilantro PestoAdd 1 oz. of chopped walnuts and 1 oz. of shredded Parmesan cheese.  Pulse or blend until pureed. Ideally, you’ll want a smooth paste.  But if it’s a little chunky that’s okay.

Take your baguette slices and arrange on a cookie sheet.  Top each with some of the pesto.  Add a little bit of shredded Parmesan cheese on top.  Bake in a 375 degrees for 8 to 10 minutes.  Serve.

Tasty Variations:

Add a few leafs of Arugula for a peppery taste or a few leaves of fresh mustard.  Enjoy!
